Have you had superfoods ice cream before? Made from superfood with coconut milk, rice milk, nut milk and cocoa butter, there's now a vegan and nutritious option after Saturday lunch.
We sat down with Klaus, one of the magicians behind Tribeca Ice Cream, self-taught ice cream maker, originally from Munich, was a banker and lived in NYC for 10 years before he decided to move back to Berlin and start the vegan ice cream shop with his brother Frank in Prenzlauer Berg.
How did you come up with the name of the shop and the different unique flavors?
Klaus: The name Tribeca Ice Cream comes from New York, it’s a neighborhood in Manhattan and I’ve been living in Tribeca for like 6, 7 years and I started the whole ice cream process in my kitchen in Tribeca, so that’s why it’s called Tribeca Ice Cream, relating to where I was starting it. Flavor-wise, we got inspired by the health-food scene, like superfoods, so we have classic flavors like raw chocolate, raw cocoa bean, maca, lucuma, and other raw ingredients, which mean they are never heated above certain temperature.
Have you always been constantly coming up with new flavors?
K: Yeah you always have to come up with new flavors cause that’s what people are looking for, they’re looking for something new, something exotic, and they come especially for this particular flavor to your shop. So, I’ll probably produce another new flavor today, it’s fresh grapefruit with black tea. They work pretty well together.
How long have you been working on the flavor or how long does it usually take?
K: I have the idea, mostly before I go to bed, like “yeah it could work”, then I go to the Bio Supermakrt to get the ingredients, and I start working on it. It takes about a couple hours to come up with a new flavor. The first experiment goes wrong, and then the next one works mostly. It’s a process, like a trial and error thing, and when you’re done with the recipe, you put the mix in the ice cream machine, and within minutes you have your product.
To the extent that you can talk about, what’s your opinion on a recipe for good ice cream?
K: It’s the ice cream mix balance, the balance between fat, sugar, water and air, which are the parameters that are important. Within a certain range, nothing can actually go wrong. Coming up with the perfect recipe is the art of making ice cream, because you have to be very precise.
So far you’ve been running the shop for a couple of years, what has been the biggest challenge?
K: This is our second summer, because we just opened the store last year in July, we had two months and then it became cold, then we had the winter break, and now we’ve been here since four weeks ago, so we’re kind of still beginners, you know, working on every detail cause you want to become better, grow and develop new flavors, add more to the menu and create excitement for the customers. It’s a fun process, but you have to work hard on it everyday.
Especially when you’re just starting, isn’t it like being a kid, like it’s scary but there’s so much you can do?
K: Yeah you can do a lot of things. The art of making ice cream is the most fun, but there’s more than just making ice cream, like running the store, buying the ingredients and making the customers happy. There are so many fields you have to be good at, you know, it’s not just making ice cream, it’s the experience you create for consumers, and it takes time.
What are the most memorable experiences you’ve had with all the people that came into the shop?
K: The thing is you have so many different consumers, and they all behave differently, have different taste, and it’s so interesting to just listen to people sometimes. Like now I’m sitting out here, listening to people about what their feedbacks are. They’re talking honestly about their experience, and those are the best feedbacks you can get. I should probably be inside making ice cream, but it's just so nice sitting here in the sun you know? (Laughes)
