We were lucky to chat with Anja, the marketing manager of Vanille & Marille, visit the ice cream manufactory and witness where the magic of ice cream making happens.
Could you tell us about how the shop started?
Anja: Falk is the one who started the shop. He had the idea of opening up an ice cream shop, so he did an Ausbildung where he learned all the nitty and gritty of ice cream making. We started the first shop on Hageberger Strasse in Kreuzberg, but as the shop grows bigger and bigger, we eventually had to move the ice cream production to Schöneberg for a bigger space. During calm times, we have two people producing ice cream, but during peak times like those hot summer days, we need as many as 8 people in production to supply the ice cream for all our stores in Berlin. Though Falk gained the basic knowledge ice cream making and the certificate from the Ausbildung, he went through a series of experiments with testing the balancing, cooling and combining ingredients to figure out the ice cream recipes we’ve been using now. We only use natural ingredients for our ice cream, so everything you see and taste comes from the natural colors and flavors from the nuts and fruits.
How do you decide on the source of the ingredients that go into each ice cream flavor?
A: The basic stuff like milk and sugar comes from the region within Germany, but for produce that doesn’t grow in Germany, we source it from places where they produce the best. For example, the vanilla comes from Tahiti, mangos are from India, chocolate is from Venezuela and Belgium. In order to find out which source to use, we would first order a small amount, make ice cream with it and see how it turns out. It never is an one-off process, and most of the time we would need to go through several rounds of experiments to find the ingredients that produce the results we like.
Besides your current collection of flavors, which so far consists of 40 flavors, are you still developing new flavor ideas?
A: We never stop thinking about new ideas to try out, new flavors to create. We have been doing features like flavor of the month, which usually is a new flavor we come up with, or sometimes a customers’ favorite comeback. This month we have apple crumble, a typical English dessert which we transformed into ice cream, with crumbs inside which give hints of the original dessert. Besides, as the world cup kicked off, we came up with a flavor called Schwarz-Rot-Gold(black-red-gold), which consists of our black lemon with buttermilk, raspberry and Indian mango, and the color combination resembles the German flag.
What's your relationship with your customers and people in the area?
A: We have collaborations with our neighbors and local business. We offer opportunities to win ice cream for our partners’ followers, and on the other hand our customers could gain chances to win various products. For example, June 1st was international children’s day, and it’s a part of our traditions to celebrate it. This year, we had raffles where people can enter to win family tickets to Lego Land at Potsdamer Platz. We like offering people more ideas of things to do with their kids in addition to having ice cream, and having those collaborations allows us to do so and support the local communities. Being the friendly shop in your neighborhood is what we stand for. Customers can talk with our friendly staff and we’re always happy to hear what they have to say.
It might seem like a question with an obvious answer, but how do you like the job?
A: It’s fun! Can you imagine working in a field more joyful than ice cream? There are so many possibilities when you make ice cream. You get to be a child again indulging in the world of colourful and flavorful ice cream. The vibes are always so positive in the store. People come in in the mood for ice cream, and it’s satisfying to see them leave with a smile on their faces.
Have you been in Berlin for a long time? What do you enjoy doing in the city?
A: I’m from Leipzig, but I’ve been living in Berlin for more than 20 years. The city has definitely changed a lot since then, and so have I. 15 years ago when I first moved to Berlin, I was really active working as a DJ in the clubs, and I met Falk in the club actually. As I gain more responsibilities and switch career paths, I simply enjoy walking my dog in the park nowadays. I like the fact that Berlin is so open and judge-free and it evolves as you grow.
I like swimming in the lakes also. Oberuckersee is one of my favorite lakes. It’s about an hour drive from Berlin and it’s so quiet there you can enjoy the feeling of having the lake all to yourself.
